Because temperature affects the way your taste buds percieve flavour!!
For example:
Coors Light is marketed as the tastiest light beer… so long as it’s nearly frozen, when you cant taste shit.
Bourbon (hard liqour in general) tastes radically different when chilled vs warm.
Ever had frozen whipped cream? Literally grab a can (reddiwhip), & pop a bunch into a cup, cover it, throw it in a freezer for a few hours. It’s suddenly ice cream. Sweet, frozen, totally different taste. Same product.
Water tastes different due to the minerals in it, what’s added… literally the purity of it. Adjusting how your tongue recieves these various flavours with temperature is super neat!!
Ever had LaCroix? Hint of lime becomes hint of hint of lime when chilled.

“And as a child I’ve been bullied for being darkskinned, so
much to a point where I wanted to be lighter. And it took me a while to really
embrace it. But when I did, I was able to stand in all
this chocolate, unapologetically.”
